Butter Cake


(This cake is topped with super thickened cream and tart lemon curd)

Ingredients

1c butter softened

1/2c sugar

8 egg yolks

3/4c milk

2 tsp vanilla extract

1 3/4c plain flour

1/4c corn flour

2tsp baking powder

1/2tsp salt

Directions

Preheat oven to 175 degrees. Grease and flour two 8 inch round pans.

Sift together flours, baking powder, and salt. Set aside.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg yolks one at a time, then stir in vanilla extract. Beat in flour mixture alternately with milk, mixing just until incorporated.

Pour batter into prepared pans. Bake for 25 to 30 minutes or until the tops spring back when lightly tapped. Cool for 15 minutes in the pans before turning out onto cooling racks

NOTE: I like to add different ingredients like lemon zest or raspberries
